| ROASTED VEGI GYROS |
| INGREDIENTS 1 batch - hummus 2 Tbsp - olive oil 1 - small onion cut into wedges 1 or 2 cloves garlic - minced assorted vegetables cut up into medium sized chunks to be roasted - including: bell peppers, zucchini, eggplant, mushrooms, etc salt to taste tomatoes, cucumbers, lettuce whole wheat pita bread paprika |
| DIRECTIONS Make up a batch of hummus using our recipe. Heat up the olive oil in a skillet and saute the onion for 4 - 5 minutes. Add the garlic and saute another 30 seconds. Now add the remaining vegetables to be roasted. Cook on a moderate heat for 10 - 15 minutes or until the veggies are done (salt to taste if desired). Take a piece of pita bread and spread a 1/4" thick layer of hummus on it. Now add a layer of shredded lettuce. Place the roasted veggies on the lettuce and top with tomato and cucumber slices. Sprinkle with paprika and serve. This recipe makes 2 to 4 or more servings, based on how many veggies you cook. Scale up or down for the quantity you need. |
